The Pink Artist

Over the past weekend I was in a familiar baking mood.  I wanted to try something new with a 'summer-y' and 'light' feel to it, so I decided on pink lemonade cupcakes.  Definitely not new to the masses, but was new to me since it was my first time baking them and as I think of it, tasting them too.
For the cupcakes and frosting I used Minute Maid Pink Lemonade concentrate
along with lemon zest and fresh lemon juice and since they're pink lemonade cupcakes, it was only right that they be colored "pink"!

Cupcake Picnic at Georgetown Waterfront Park

This past weekend I had the pleasure of joining the ladies of the Cupcake Crusaders at the waterfront park in Georgetown, DC.  We had such a wonderful time!  Everyone who participated brought some cupcakes and we did a good ole fashion cupcake swap and even had a cupcake eating contest!  The contestants rocked out!!  I was too chicken to participate, plus this diet I'm on would have been screaming at me! I have plenty of pics posted below, so enjoy scrolling through!

Weekend Fun - Colors & Cinnamon...Huh?!

This past weekend my orders consisted of beautiful bright buttercream frostings, cinnamon, and of course the 'Simply Stawberries' (strawberry) 
and 'Love on Top' (red velvet), but I opted to only photograph the C's - cinnamon and colorful.

The cupcakes below were requested by a client for their 20th wedding anniversary celebration they were having.  One of the nicest couples I've had the pleasure of meeting in my entire life.  The exchange was very brief, but they definitely made a lasting empression.

 Don't you just love the color combination of pink and orange?  I know I do and the fact that orange is my favorite color, probably has plenty to do with it. A customer requested these cupcakes (and red velvet) for her daughter's graduation party and informed me they were reluctant to share...too funny!

14-Carrot Good!

A De-Li-Cious Carrot Cupcake Recipe

Let me start by saying that my mother makes the best carrot cake I have ever tasted in my 35 years - hands down!  And it's a general concensus amongst family, friends, co-workers and anyone who has ever come in contact with Joy's Carrot Cake. The cake is always melt-in-your-mouth moist and the cream cheese icing is thee bomb. And get this, she NEVER uses anything remotely close to resembling a mixer - her two hands are the magic that's worked on this masterpiece (jealous much?!)
 
Well needless to say, the recipe below is not her recipe, but don't get it twisted--it's still deliciously devine! The brown sugar brings out a small taste of molasses, the toasted walnuts give it that added sophistocated and bittersweet flair, and the crushed pineapples are just plain fun! But the real star of these cupcakes is the *frosting*. The brown sugar with the cream cheese gives a tanginess that's out-of-this-world.

Some might dub these as a seasonal cupcake (fall & winter), but where I'm from, they're played all year-round because they're just that darn good!  Enjoy!


RECIPE:

Yields: Approximately 1-to-1 1/2 dozen standard size cupcakes

Ingredients:
- 1 1/2 cups all purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp kosher salt
- 1/2 tsp ground cinnamon
- pinch of nutmeg
- 1 1/2 cups shredded carrots
- 1/4 cup buttermilk (room temperature)
- 1/2 cup vegetable oil
- 3/4 cup sugar
- 1/4 cup dark brown sugar
- 2 large eggs (room temperature)
- 1/2 tsp pure vanilla extract
- small can of crushed pineapple
- 1/4 cup chopped toasted walnuts

Directions:
1. Preheat oven to 350 F. Toast the walnuts in the oven for 4-5 minutes. Remove from oven and set aside to cool.
2. Rinse the carrots and peel off the rough skin; grate the carrots.
3. In a large bowl, whisk flour, baking powder, baking soda, kosher salt, cinnamon and nutmeg.
4. In the mixing bowl, place carrots, buttermilk, oil, sugar, eggs, vanilla extract, and pineapples together - whisk thoroughly.
5. Fold the flour mixture into the carrot mixture. Fold in the toasted walnuts until evenly incorporated. DO NOT overmix!
6. Scoop into cupcake liners and bake for 18-20 minutes. Rotate pan after first 15 minutes. Cool completely on wire racks before frosting.

Brown Sugar Cream Cheese Frosting
- 1/4 cup unsalted butter (cold)
- small sliver of butter flavored shortening
- 1/4 cup dark brown sugar
- 1 tsp pure vanilla extract
- 1 tsp lemon juice
- 1/4 kosher salt
- 1/4 cup regular cream cheese (Philly's)
- 2 Tbsp Neufchatel cheese (Philly's)
- 3 cups confectioners sugar
- 1/2 Tbsp heavy whipping cream

1. Cream butter until whipped. Add shortening and continue to cream. Don't let it get too soft.
2. Add brown sugar, vanilla, lemon juice and salt. Mix until incorporated. Scrape bowl.
3. Add both cream cheeses and mix to get out lumps. Don't overmix and let get too soft. Don't want it to lose its shape.
4. Turn mixer speed down and add confectioners sugar.
5. Add heavy whipping cream.
6. Turn mixer speed up and mix for about 4 minutes.

An array of 'Spring' Flavors

This past weekend, I had some cupcake orders to fill and it was my pleasure to whip up such an array of spring inspired flavors!  With so much variety around me, I even commended myself for only taste testing a quarter of each cupcake flavor; so in all, I had one and a half cupcakes! Not bad for a chic who's on a mission to drop 10 lbs by June 1!

Pina Colada's!!! Summer is almost here

Summer is definitely in the air (this weather will make you a firm believer)!  The summer cupcake flavors are on the way, starting with this one below! I named it "Pina Colada", but I am searching for a new name, because I am not sure if I will stick with that one.  So far, I have considered 'Hawaii 5-0' and 'La Coco'.  What do you think of those two? If you don't think those are sound catching, then let's play 'Suggest a Name'!!

Cherry & Almonds

Almond extract, in my opininon is one of the more stronger flavorings, but I happen to love it!  So much so, I re-created this recipe for Cherry-Almond cupcakes.  This is an almond-vanilla flavored cupcake with cherry (maraschino) and almond buttercream frosting topped with a maraschino cherry.  Yum!

The "Simply Strawberry" - Revisited

By far, one of That's So Morie Cupcakes' most requested flavors is the "Simply Strawberry"!  Maybe it's the fresh strawberries...perhaps the cream cheese crosting...or it could be the strawberry sauce.  Personally, I think it's a combination of all of the above, but you'll have to taste it to decide for yourself!

Cookout Celebration



I made five dozen carrot cupcakes with cream cheese frosting and sprinkled with walnuts on top. These too were a hit (out of 60 cupcakes, six were left and they were snatched up the next morning!)
