Minnie & Pink Polkas

Mickey & Minnie Mouse...true icons in the land of Disney and also in kids hearts! I got a request to make some Minnie Mouse cupcakes for twin girls who were
turning one and the colors were pink and white.

They turned out great and were super easy to make.  I used different sized piping tips for minnie's face, ears and polka dots, hand crafted the bows and used buttercream for the minnie white polka dots on the bow.  Super cute these were...and tasty too!

The Pink Artist

Over the past weekend I was in a familiar baking mood.  I wanted to try something new with a 'summer-y' and 'light' feel to it, so I decided on pink lemonade cupcakes.  Definitely not new to the masses, but was new to me since it was my first time baking them and as I think of it, tasting them too.
For the cupcakes and frosting I used Minute Maid Pink Lemonade concentrate
along with lemon zest and fresh lemon juice and since they're pink lemonade cupcakes, it was only right that they be colored "pink"!
A big SHOUT OUT to my baby girl for winning the naming contest with
The Pink Artist!  She beat out my mother and fiance'
who's names sadly didn't make the list..womp-womp!

Baby Shower

These are my first babyshower cupcakes made for a friend. Since I try to stay away from fondant (so far anyway---due to the taste), I wanted to stick with buttercream for the design. For the next time, I think I'll try royal icing...that will probably give more of a sheen and be a little more forgiving than the buttercream. However, changing the consistency of the buttercream will probably work just fine as well--so many decisions! Moving on, the cupcakes are yellow with lemon zest and the frosting is a lemon glaze with tangy lemon buttercream for the letters & numbers.
